A product is hidden only when every tracked variant has zero inventory across all locations. Products with "continue selling when out of stock" or no inventory tracking are never touched.
Add a tag (e.g. nohide, pre-order) to those products, then list the tag under Extra rules → Never hide products with these tags on the Dashboard. Tagged products are also skipped by the variant-hide feature.

Yes, on Starter and Pro. Turn on Hide unavailable variants on the Dashboard. When every unit of a size or colour sells out, that option is unpublished from your storefront automatically — and re-published once it's restocked. Their photos go too. It works on every theme with no setup, and products with an exclusion tag are skipped.
By default it returns a 404 (Google treats this as temporary). On the Pro plan, enable Redirect hidden URLs to send those URLs to the first collection the product belongs to. SEO link equity is preserved and customers stay on your store.
